What a beautiful post! I am inviting more intentional choices regarding my food. I get so busy that I am not spending the time I would like in the kitchen - and the kitchen time brings me so much joy. This week I've skipped some meals which means I lost opportunities to add nutrients to my body.

Well, I batch-cooked up some tempeh and pearl barley this week, which served me for 3 lunches with lots of good nutrients! I boiled eggs for snacks, salad additions. I had made chickpea oat cookie dough balls for a healthy snack as well (so good with super simple ingredients). So... I was on my game this week! Now I will work on next week's batch cooking. :-)
